Sue I am making your Elote - Mexican Corn on the cob and I see that it calls for Cotija Cheese. I know I can't get that here but looking it up I see that it is known as the Parmesan of Mexico so that is what I will sub.

I used the soft variety of cotija which feta cheese would be the best substitute. It's kind of like the two different kinds of goat cheese- soft chevre is crumbly and the harder aged goat cheese is dry like Parmesan or Asiago.
