I made the edamame chicken stir fry last night - it was OK. When I try it again, I will doctor up the seasonings heavily and make some veggie changes. It was fine and quite colorful, but even my BF found it a bit bland, and he is Mr "mild only." A good base recipe that needs tweaking for me. It didn't have much Asian flavor, despite a lot of ginger and lemongrass.

Tonight might be baked ziti or something similar. Still have to make the apple strudel I keep getting too tired to make (or forget until it is too late). It has been so hot in the house during the day, that I don't feel like baking and heating up the house at all. What happened to my nice cool weather? The A/C has been on the past few days.

I intended to make Bergy's Crock Pot Asian Spiced Pork Roast and serve it with brown rice and asparagus.

I left the frozen pork loin on the counter to thaw a bit while I went out for a meeting. (I know, I know - not the healthiest way to thaw but I did it anyway :oops: ). When I returned home 2 1/2 hours later to put it in the crock pot I couldn't find it. I searched everywhere, called my husband and kids but could not find the pork roast. We determined that it was the work of our four-footed kids. It must have been a team effort with the cat pushing it off of the counter and the dogs dragging it away. The empty wrapping was on the floor in the living room. :lol: I guess we might eat out tonight!

OMG that is so funny! My kitties open the pantry, and knock the treats off all the time ... when they want. I have learned leaving stuff on the counter, lol.

Sorry acerast, I know, I know I shouldn't be laughing but just thinking to the team effort of those four footed kids of yours managing not only to get that roast off the counter but to leave no evidence other than an empty wrapper is some team work for sure! Good thing we love our fur babies!

Easy dinner tonight just a baked potato topped with some ground beef and other toppings we actually really enjoy this for dinner :P

I love that too for dinner. I'll make a little gravy, or add mushrooms; beef, chicken, or ham; sometimes, lots of veggies. And like you said, cheese, onions, sour cream, etc. Leftover taco meat; creamed chicken; ham and broccoli - It can be a lot of fun.

One of the ladies I cook for - on Fridays 2 of them get together with usually 6-8 friends and have a card came night. This is something I have made for them many times. I give them 2 of 3 warm toppings to add to their spud along with condiments. They love it. They make their own; then, add a salad and a perfect dinner. Fun to entertain with as well.

OK, got my apple strudel made and it turned out well - dd was pleased. I only tasted a bite, since I am trying to avoid all these desserts they keep requesting. Very hard not to have more - yummm.

Also decided to have leftovers for dinner, since the kitchen is a huge mess right now after baking the strudel.

Not sure if I'm going to eat ... I got my eyes dilated today (reg exam); but even if they give me the drop ... it doesn't matter. I still get a killer headache for the whole night. And I don't get those often. Anyways, I am just not hungry. Maybe a small steak sandwich on a roll; something simple; just to eat something. Maybe just another cocktail (-| :-??. I would love the jacuzzi ... still waiting on a part.
