Served with a whole wheat tortilla, Home made cooked salsa no recipe, Left over Heart of Palm Salad #1491 (Not really Mexican but Costa Rican). Best I could do with a fridge full of leftovers from yesterdays lunch party

Remember the photothon/cookathon runs until Monday night, to give everyone ample time to complete their tags. You can still make new tags until then as well, if you wish.

We had a very nice Fiesta Chicken Taco Salad served in a Tortilla Bowl.
I had never made Tortilla bowls before , Dreamer-in-Ontario's recipe made what i thought was a difficult thing very easy and fun to do - and quick too in the microwave. :lol:
And MimiMaine's Fiesta Chicken Taco salad looked wonderful and colourful in it , the whole thing was delightful and delicious, especially the dressing :!:

Everyones pics are just wonderful. Making Kittens casserole tonight.

I wish this event was going to be longer....Like running all through May. I love mexican food.

I have a reason for keeping it short.
First, it's a test run for a cookathon event. I wanted to see if there would be a good response, and there has.
Second, if the event was successful, which I think it is, I would be willing to guest host, if the photo forum hosts were agreeable to it, a whole series of photothon/cookathon events, about every 4-6 weeks, each on a different topic, and each one lasting 5-7 days, so we don't burn out on it.
If the forum hosts are "Go!" for this, anyone who would like to help out with me on the events could feel free, either on a one-time basis or with as many events as they would like.
If everyone likes, the next photothon event could be held the first part of June, maybe for something like "Strawberries" or something else, and then again in July with a "Summer Cookout" theme. And after that who knows? Maybe members could vote on what kind of theme they'd like.
I really enjoy cookathons from the "old days" at zaar, and love having an excuse to cook! :lol:
But first things first, photo forum hosts have to decide if they want more of these.

Sue you have done a fine job setting up this Cookathon/Photothon and we
would like to see Mexican continue for the month of May if you wish to do
so.. We have already made plans for June and future months for fun events
that have been requested by members. As for future cookathon/Photothon
events we will have to play that by ear. The membership is still small so
we plan events that will draw members in for a longer periods of time. You
put a lot of effort into Cinco de Mayo and it is sure appreciated. Contact
me by Z-mail or e-mail if you want to discuss this further
