"So quick and easy. The orange is used with the skin on. I add chocolate chips and nuts to this recipe, so have listed the variation as an option. I suppose you could use any nuts really or even some dried fruit. This is a very moist cake, so I serve it warm with cream, but it can be served cold with a citrus icing."

Step by Step Method

Step 1

Wash and dry the orange.

Step 2

Cut the orange into quarters and remove the pips.

Step 3

Place the first 5 ingredients into a food processor and blend until smooth.

Step 4

If using the optional ingredients, wait until the mix is well blended, and add the choc chips only, blend chips until just chopped. After blending choc chips, stir in the nuts if using.

Step 5

Pour mix into a greased and lined 20cm baking tin and bake at 180dg for 50 minutes.

Step 6

Serve warm with cream, or let cake cool and ice.

Very dense and moist, and the orange and chocolate flavors go so well together. I baked mine in a 8” round pan and goofed on converting oven temp. to F. so mine got a bit brown around the edges, but still tasted great. I served it plain, but I think a chocolate frosting would be good.
