"This is such a quick and delicious sauce. Perfect served over my 'Chicken and Three Cheese Ravioli.' But, it is also delicious tossed with your favorite cooked pasta; and wonderful drizzled over grilled chicken or pork. It is very easy and quick to prepare."

Step by Step Method
Step 1
Sauce ... Add the shallot, white wine and broth to a small pot and bring to medium high heat (a light boil). Immediately reduce to a simmer until it is reduced by about 1/3. Add the pesto and mix to combine. Continue to cook another minute to combine all the flavors and heat the pesto through. Note: Pesto can be very oily .. so, make sure to stir it well before adding to your sauce. I also like to use a slotted spoon. And, as mentioned - there are many store bought brands that are quite good; but, you could certainly make your own.
Step 2
Serve ... Great over ravioli, tortellini; or tossed with your favorite pasta. Drizzle over grilled fish, or pork as well. ENJOY!
