Ingredients

The ingredients are:
  • 1 large shallot, minced fine
  • 1/2 cup dry white wine
  • 1/3 cup chicken or vegetable broth
  • 2-3 tablespoons basil pesto (a good store bought brand will work just fine)

How to Make

  • Step 1: Sauce ... Add the shallot, white wine and broth to a small pot and bring to medium high heat (a light boil). Immediately reduce to a simmer until it is reduced by about 1/3. Add the pesto and mix to combine. Continue to cook another minute to combine all the flavors and heat the pesto through. Note: Pesto can be very oily .. so, make sure to stir it well before adding to your sauce. I also like to use a slotted spoon. And, as mentioned - there are many store bought brands that are quite good; but, you could certainly make your own.

  • Step 2: Serve ... Great over ravioli, tortellini; or tossed with your favorite pasta. Drizzle over grilled fish, or pork as well. ENJOY!
