"This is way too easy, and perfect for the holidays. It is the simplest and most full proof fudge ever. Now, I use walnuts, you could use pecans if you wanted; but walnuts are my favorite. The basic recipe is from Eagle Brand; but this was a variation that my friend and I came up with."

Step by Step Method

Step 1

Chocolate ... Add the chocolate and eagle brand sweetened condensed milk (do NOT use evaporated milk) to a medium size bowl and microwave on medium heat, at 2 minute intervals, stirring in between until melted and creamy. Remove, stir in the raisins, walnuts, rum, and salt. You can also do this in a double boiler; or, set a bowl over a pot of boiling water (make sure the water doesn't hit the bottom of the bowl). If using a rum extract, go a bit easier; it tends to be very over powering.

Step 2

Finish ... Line a 8x8 pan with parchment paper and pour in the warm fudge. Make sure to press it down, especially in the corners. Refrigerate 1-2 hours until firm. Remove and cut into squares.

Step 3

Serve ... Once the fudge is done, it will keep at room temperature - I usually keep in an air tight tin or cookie jar. ENJOY! This is such an easy and versatile fudge.
