"I have, only, in the last year discovered that I love eggplant and I find this recipe not only easy but also delicious. That is why I have converted my original recipe #4711 into an "Actifry" recipe. It worked 100% - we loved it. So Actifry or stir fry I hope you try it and enjoy it as much as we have. Depending on the size of the eggplant it will determine how many it serves. My latest served only 2. You could puree this recipe and serve with crackers as an appetizer. Fresh basil is best but use dry if you don't have any fresh. Be generous in the size of the eggplant cubes and if you wish take 5 minutes off the eggplant cooking time before you add the peppers. We enjoy it the full 10 minutes."

Step by Step Method

Step 1

Place your chopped onion in the actifry bowl, drizzle with the oil, set timer for 5 minutes, turn on

Step 2

Add the prepared eggplant, set timer for 10 minutes, turn on

Step 3

Add the redpepper, garlic and Tex/Mex spice. set for 10 minutes, turn on

Step 4

Mix together the vinegar, soy sauce, brown sugar and basil leaves. set timer for 5 minutes add to actifry. when it finishes serve and enjoy

The aubergine and onion were vastly overcooked in this time. Tasted ok but almost dehydrated. Would make again but reduce time
