"We make a fair amount of pizza at our house and have developed opinions as to ingredients to use and methods that work well in our home. Give it a try - none of this is difficult and the taste is preferred to pizzaria products. The sauce is simply canned crushed plum tomatoes strained of excess liquid. The sauce is not cooked as the canned product has already been cooked. We shake cans in the store, listening for the quietest can (the thickest). We get strange looks. :)"

Step by Step Method
FOR THE DOUGH
Step 1
Add ingredients in the order given in a bread machine and use the dough cycle or --
Step 2
Mix in a large bowl until all ingredients are wetted, cover and let rest 10 minutes.
Step 3
Knead for 5 minutes by hand using a minimum of flour and place in a straight sided container that has been oiled and cover.
Step 4
After 20 minutes, tip dough onto a lightly oiled counter and stretch into a rectangle. Fold the top down and the bottom up letter-style and do the same side to side. Replace into the container and cover.
Step 5
After the dough has risen to twice it's volume, tip the dough onto a lightly floured counter and divide into 2 pieces forming each into a ball. Cover with oiled plastic and let rest 5 minutes.
FOR THE PIZZAS
Step 6
Stretch each dough ball into a 10" disk. If the dough shrinks after stretching, wait 5 minutes and stretch some more.
Step 7
Move each dough piece to parchment paper.
Step 8
Preheat oven (preferably with a pizza stone) to 500°F and let dough rise for 15 minutes.
Step 9
Cover dough with toppings and let rise for 15 more minutes.
Step 10
Bake each pizza separately for 4 minutes. Turn the pizza for even cooking and bake until the dough is browned some, and the cheese is bubbly (about 2 more minutes).
