"I had some peppers I wanted to use up, and this is what happened. This is much easier than it look. If you like you can serve with your favorite Taco toppings.If you prefer,you can use homemade taco seasoning.This was first posted to another site in 2004.Posted to ZAZZ on March 26th.,2013"

Step by Step Method

Step 1

Pre-heat oven to 375 degrees.

Step 2

Brown ground beef in skillet over medium heat, drain and return to skillet.

Step 3

Add taco seasoning and water,mix well and stir ocassionally until water is absorbed.

Step 4

Stir salsa and rice into ground beef mixture.

Step 5

With cooking spray, coat a 8x8-inch baking dish.

Step 6

Slice tops off of peppers and remove seeds and membrane.

Step 7

Blanch peppers in boiling water for 5 minutes, or until slightly tender (if desired).

Step 8

Evenly divide ground beef mixture among peppers.

Step 9

Cover and bake for 20 to 25 or until heated through.

Step 10

Remove cover,and sprinkle cheese evenly over peppers.

Step 11

Return to oven until cheese is melted, about 10 minutes.

These were really tasty...I cut the recipe down to 2 servings and had tall peppers...I chose not to blanch them due because we don't care for overly soft peppers...I served them with a side of mexi fries...it was a yummy meal...made for "Cooking on a Dime" tag game...
