Ingredients

The ingredients are:
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 2/3 cup water
  • 1 pound ground beef (or you can sub turkey or chicken)
  • 6 green bell peppers, or color of your choice
  • 1 cup salsa( I used mild,but use the heat preference of your choice)
  • 1 1/2 cups cooked rice
  • 1 cup shredded Mexican Blend Cheese

How to Make

  • Step 1: Pre-heat oven to 375 degrees.

  • Step 2: Brown ground beef in skillet over medium heat, drain and return to skillet.

  • Step 3: Add taco seasoning and water,mix well and stir ocassionally until water is absorbed.

  • Step 4: Stir salsa and rice into ground beef mixture.

  • Step 5: With cooking spray, coat a 8x8-inch baking dish.

  • Step 6: Slice tops off of peppers and remove seeds and membrane.

  • Step 7: Blanch peppers in boiling water for 5 minutes, or until slightly tender (if desired).

  • Step 8: Evenly divide ground beef mixture among peppers.

  • Step 9: Cover and bake for 20 to 25 or until heated through.

  • Step 10: Remove cover,and sprinkle cheese evenly over peppers.

  • Step 11: Return to oven until cheese is melted, about 10 minutes.
