Step by Step Method
Step 1
In a small bowl, add all the ingredients for the taco seasoning. Mix to combine and set aside.
Step 2
Cook pasta according to the package instructions. Drain and set aside.
Step 3
Heat a large skillet over medium-high heat. Add olive oil and onions and cook for about 5 minutes until onions have softened.
Step 4
Add garlic and cook for 30 seconds.
Step 5
Add ground meat, break up with a spatula and cook until no longer pink and fully cooked through, about 8-10 minutes.
Step 6
Add diced tomatoes and taco seasoning. Stir to combine and simmer for 3 minutes.
Step 7
Add water and cream cheese. Stir together until the cream cheese has fully melted to create a sauce.
Step 8
Add cooked pasta and shredded cheddar cheese. Gently toss to combine until the cheese has fully melted. Taste and season with salt and pepper as necessary.
Step 9
Scatter chopped cilantro before serving, if using.
