Step by Step Method
Step 1
In large saucepan, combine sugar. water, honey, and citric and tartaric acids.
Step 2
Bring to boil. stirring to dissolve sugar.
Step 3
Remove from heat; add grated rind and juice of lemons and oranges.
Step 4
Cover and let stand overnight. Next day, strain, bottle and refrigerate.
Step 5
Syrup will keep for several months.
Step 6
To serve, pour 1/4 cup prepared syrup into large ice-fined glass and top with 3/4 cup water or club soda. Stir to blend.
