Step by Step Method

Step 1

In a mixing bowl cream the butter with sugar for about 2 minutes.

Step 2

Add in egg yolks, vanilla and dry pudding mix; beat for about 2 minutes.

Step 3

In a small bowl combine the flour with baking soda and salt; add to creamed mixture and beat until well combined (mixture will be crumbly at first).

Step 4

Chill dough for about 3 hours.

Step 5

Preheat oven to 350 degrees F.

Step 6

Grease a large baking sheet.

Step 7

Pour about 1/2 cup sugar into a bowl.

Step 8

Roll a heaping teaspoonful of cookie dough in the sugar, then place onto baking sheet leaving about 2 inches between the dough (these cookie spread while baking).

Step 9

Bake for about 8 minutes (for a crispier cookie bake longer).
