"A fantastic side dish from the Taste of Home Comfort Food Diet. This is a great introduction to polenta -a cornmeal preparation- with lots of taste. Look for tubes of prepared polenta in the refrigerated section of your grocery store. My store has them in the produce section."

Step by Step Method

Step 1

Preheat your oven to 425°F. Carefully unwrap the polenta, taking care to maintain the tube shape. Slice the polenta in half, widthwise. Cut each of these halves lengthwise so you have 4 sections. (The tops will be rounded with a flat cut side.) Cut each section into 8 strips. Spray a baking sheet with cooking spray. Lay out the polenta strips into a single-layer onto the baking sheet.

Step 2

In a small bowl, combine the olive oil and spices. Drizzle the spice mixture over the polenta strips and carefully toss to coat. (I used my hands to rub the mixture on the strips gently.) Bake for 7 to 10 minutes, flip the polenta and bake for an additional 7 to 10 minutes, or until golden brown and delicious.
