"Spanish Sausage Fideuà is a vibrant and savory dish that combines thin pasta noodles, Spanish sausage, and a medley of colorful bell peppers and zucchini. I find "fideo" noodles in the "International" or "Ethnic Foods" section of my local grocery store, but broken pieces of vermicelli or angel hair pasta are a fine substitute."

Step by Step Method

Step 1

Heat the olive oil in a large, flat-bottomed pan or paella pan over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant, about 2-3 minutes.

Step 2

Add the sliced Spanish sausage to the pan and cook for 2-3 minutes until it begins to release its flavorful oils.

Step 3

Add the sliced bell peppers and zucchini to the pan and continue cooking for another 3-4 minutes until they start to soften.

Step 4

Stir in the smoked paprika, turmeric, dried thyme, salt, and pepper. Cook for 2-3 minutes to allow the flavors to meld together.

Step 5

Add the fideo (or substitute pasta) to the pan and stir to coat them with the spices and vegetables.

Step 6

Pour in the chicken broth and canned diced tomatoes. Stir well to combine.

Step 7

Reduce the heat to low and cover the pan. Simmer for about 10-12 minutes, or until the pasta is al dente and has absorbed most of the liquid, stirring occasionally.

Step 8

Remove the pan from the heat and let it rest, covered, for a few minutes.

Step 9

Serve the Fideuà hot, garnished with fresh parsley or cilantro.
