Step by Step Method
Step 1
Peel and boil potatoes until tender. Once cooled, smash into a puree and add butter.
Step 2
Make the custard mixture by mixing the eggs, sugar, vanilla, cinnamon and milk well with an electric mixer.
Step 3
Add sweet potatoes to the custard mixture, and beat again until the filling is smooth. Some of the fibers from the sweet potato can get stuck on the beater. Discard the fibers.
Step 4
Fill the pie crust with the sweet potato filling, and sprinkle the top of the pie with a little cinnamon.
Step 5
Bake at 350 degrees, for 1 hour. After 1 hour test with a toothpick to make sure it comes out clean, before removing from the oven.
Step 6
Let pie cool, then chill.
Step 7
Serve with a spoonful of whipped cream on top.
