Step by Step Method
Step 1
Place 2 tablespoons Olive Oil in a large non-stick frying pan and turn heat to medium low when oil is hot
Step 2
Add bread (i would flip bread so evenly coated here)and cook until slightly brown. Turn bread over and cook to slightly brown.
Step 3
Remove from pan and set aside on the plate you will serve the sandwich.
Step 4
Add eggs to a small bowl with a pinch each of Salt & Pepper and Milk.
Step 5
Beat eggs with a fork until completely mixed
Step 6
Add remaining Olive Oil and Butter to pan and turn heat to medium.
Step 7
When the pan is heated and the butter starts to sizzle, add the eggs to pan and let cook while stirring for about 15 seconds.
Step 8
Turn heat to low and let the eggs cook without stirring for 45 seconds.
Step 9
Flip the eggs over and let cook for 60 seconds on low heat.
Step 10
Turn heat off.
Step 11
Place the cooked eggs on one piece of bread.
Step 12
Sprinkle a little salt & pepper over eggs. Top with second slice of bread and serve.
