Step 1: Place 2 tablespoons Olive Oil in a large non-stick frying pan and turn heat to medium low when oil is hot
Step 2: Add bread (i would flip bread so evenly coated here)and cook until slightly brown. Turn bread over and cook to slightly brown.
Step 3: Remove from pan and set aside on the plate you will serve the sandwich.
Step 4: Add eggs to a small bowl with a pinch each of Salt & Pepper and Milk.
Step 5: Beat eggs with a fork until completely mixed
Step 6: Add remaining Olive Oil and Butter to pan and turn heat to medium.
Step 7: When the pan is heated and the butter starts to sizzle, add the eggs to pan and let cook while stirring for about 15 seconds.
Step 8: Turn heat to low and let the eggs cook without stirring for 45 seconds.
Step 9: Flip the eggs over and let cook for 60 seconds on low heat.
Step 10: Turn heat off.
Step 11: Place the cooked eggs on one piece of bread.
Step 12: Sprinkle a little salt & pepper over eggs. Top with second slice of bread and serve.
