"Not really a recipe, but rather a technique. I never measure... We love New England style baked cod, but sometimes I want to get away from the breading and butter. LOL. This prep makes for a delicious and quick weeknight main, but is nice enough for company. This recipe is just for two - I love using my small unglazed stoneware pan from Pampered Chef, as the fish always turns out perfectly and is just the right size for us."

Step by Step Method

Step 1

Preheat oven to 400F.

Step 2

Place the cod fillets in a baking dish that barely fits the fish. Drizzle the fillets with the olive oil, then squeeze some lemon juice over each. No need to juice the lemon first, just cut a lemon in half and squeeze it! Season to taste with some kosher salt. Very lightly shake some cayenne pepper over each fillet. Carefully, unless you like things very spicy. This just gives the fish some color. If you don't like spicy at all, you can sub sweet paprika.

Step 3

Bake for 10-12 minutes, or until fish flakes easily. Bake time depends on the thickness of your fillets. We like the thick end, about an inch thick, and it takes about 12 minutes.

Step 4

Remove from oven, plate, and garnish with chopped parsley. If desired, serve with a wedge of lemon alongside.
