Step by Step Method
Step 1
Melt butter and sauté onion and garlic over medium heat until softened.
Step 2
Add curry powder and cook for about a minute.
Step 3
Add the apple juice, squash, and chicken broth and bring to a simmer.
Step 4
Simmer soup gently for about 25 minutes until the squash is softened.
Step 5
Remove from heat and blend with an immersion blender.
Step 6
Add chilli garlic sauce if using, and check seasonings.
