Step 1: Melt butter and sauté onion and garlic over medium heat until softened.
Step 2: Add curry powder and cook for about a minute.
Step 3: Add the apple juice, squash, and chicken broth and bring to a simmer.
Step 4: Simmer soup gently for about 25 minutes until the squash is softened.
Step 5: Remove from heat and blend with an immersion blender.
Step 6: Add chilli garlic sauce if using, and check seasonings.
