  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon curry powder
  • 1/2 cup apple juice
  • 3 cups cubed butternut squash
  • 3 cups chicken broth
  • 1/2 teaspoon of chilli garlic sauce (optional)

How to Make

  • Step 1: Melt butter and sauté onion and garlic over medium heat until softened.

  • Step 2: Add curry powder and cook for about a minute.

  • Step 3: Add the apple juice, squash, and chicken broth and bring to a simmer.

  • Step 4: Simmer soup gently for about 25 minutes until the squash is softened.

  • Step 5: Remove from heat and blend with an immersion blender.

  • Step 6: Add chilli garlic sauce if using, and check seasonings.
