"OK, this cake doesn't taste exactly like a root beer float, but it does have a wonderful hint of rootbeer flavor. I thought instead of adding vanilla extract, it would be better to use root beer extract. I was so correct! That made the cake just sing with root beer flavor! The cake is wonderful if you use vanilla extract, but if you really want a rootbeer float type of taste, get the root beer extract! "

Step by Step Method

Step 1

Preheat oven to 350°. Prepare cake mix according to package directions, except substitute root beer for liquids in the recipe. Add the lemon peel and vanilla. **The way I make is to use the eggs the box mix calls for, but replace the oil and water with root beer.

Step 2

Pour cake into a greased 13x9 pan. Bake according to package directions or until a toothpick comes out clean. Cool cake completely.

Step 3

Celebration Icing: In a medium mixing bowl, beat 1/3 cup butter until smooth, add one cup powdered sugar and mix well. Slowly beat in root beer and vanilla extract or root beer extract. Add the last 2 cups of powdered sugar beating well until mixed completely. You may need to add more root beer or powdered sugar to get it to the right consistency to spread. Ice cake and enjoy!

This was an unexpected last minute make dessert request for one of the ladies I cook for. I grabbed this because I had seen it before and it looked SO easy (my favorite with baking, but also good). Well made it, they ate, and they loved it. I sent them the recipe and link. They thought it was fantastic. You know me and baking ... NOT my thing, but made it as is and perfect. I'm sorry for no pic, it was baked and their house, so I don't take pics there. But I will tell you it was great. I got a piece too. And I don't like sweets and enjoyed it. That says a lot trust me. Delish! I did use the vanilla for the frosting, but otherwise, spot on!!
