  • 1 (18.25) ounce white or yellow cake mix (either works)
  • Root beer (amount depends on the liquid required by your cake mix)
  • 1 1/2 teaspoon vanilla or root beer extract
  • 1 teaspoon lemon zest, finely shredded
  • Crushed root beer barrels for garnish (optional)
  • Icing:
  • 1/3 cup butter, softened
  • 3 cups powdered sugar
  • 3 tablespoons root beer or more if needed
  • 1 teaspoon vanilla or root beer extract

How to Make

  • Step 1: Preheat oven to 350°. Prepare cake mix according to package directions, except substitute root beer for liquids in the recipe. Add the lemon peel and vanilla. **The way I make is to use the eggs the box mix calls for, but replace the oil and water with root beer.

  • Step 2: Pour cake into a greased 13x9 pan. Bake according to package directions or until a toothpick comes out clean. Cool cake completely.

  • Step 3: Celebration Icing: In a medium mixing bowl, beat 1/3 cup butter until smooth, add one cup powdered sugar and mix well. Slowly beat in root beer and vanilla extract or root beer extract. Add the last 2 cups of powdered sugar beating well until mixed completely. You may need to add more root beer or powdered sugar to get it to the right consistency to spread. Ice cake and enjoy!
