Place rice in a strainer and rinse under cold water and drain. Heat oil in heavy saucepan over medium high heat. Add white onions, thyme, and garlic. Saute until onions are golden (5-10 minutes). Mix in rice, broth and salt and bring to a boil, stirring occasionally. Reduce heat to low, cover, and cook until rice is tender and broth is absorbed (20 minutes). Stir in green onions and cilantro. Season wit pepper and salt is desired.

I knew I would like this recipe when I saw it. I've had a few variations of rice that are similar, and this was enjoyed as expected. As a bonus, I had a lot of leftovers and had family over the day after I made it, so I heated it up in the microwave...and everyone loved it. No one left even a spoonful on their plates, which is of course the true test of whether people really like the food or not. :)
