Step by Step Method
Step 1
Sort and rinse the beans. Combine the beans with a generous amount of water in a bowl and soak for overnight (approximately, 8 + hours); drain.
Step 2
Combine the beans, 2 quarts water, salt pork and salt to taste in a large stockpot; bring to a boil. Reduce heat and simmer for 45 minutes. Stir in next 5 ingredients (onions - garlic). Add the 1 tablespoon salt (fyi: I'm questioning the amount of salt, therefore proceed with caution) and the next 6 ingredients (Worcestershire sauce - Tabasco sauce); mix well.
Step 3
Simmer for 1 hour, stirring occasionally. Add the sausage and cook for 45 minutes. Remove from the heat and let stand until cool; DO NOT chill. Return the bean mixture to the heat and bring to a boil. Reduce the heat to low and simmer for 30 - 40 minutes or to the desired consistency, stirring occasionally. Serve over hot cooked rice.
