Ingredients

The ingredients are:
  • 1 pound dried red beans
  • 2 quarts water
  • 8 ounces salt pork
  • Kosher or sea salt, to taste
  • 3 cups onions, chopped
  • 1 bunch green onions, chopped
  • 1 cup fresh parsley, chopped
  • 1 cup bell peppers, chopped
  • 1 (4 ounce) can tomato sauce
  • 4 garlic cloves, large, crushed
  • 1 teaspoon Kosher or sea salt (or to taste)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 3 dashes Tabasco sauce
  • 1 pound link sausage, sliced
  • Hot cooked rice (amount proportionate to servings noted)

How to Make

  • Step 1: Sort and rinse the beans. Combine the beans with a generous amount of water in a bowl and soak for overnight (approximately, 8 + hours); drain.

  • Step 2: Combine the beans, 2 quarts water, salt pork and salt to taste in a large stockpot; bring to a boil. Reduce heat and simmer for 45 minutes. Stir in next 5 ingredients (onions - garlic). Add the 1 tablespoon salt (fyi: I'm questioning the amount of salt, therefore proceed with caution) and the next 6 ingredients (Worcestershire sauce - Tabasco sauce); mix well.

  • Step 3: Simmer for 1 hour, stirring occasionally. Add the sausage and cook for 45 minutes. Remove from the heat and let stand until cool; DO NOT chill. Return the bean mixture to the heat and bring to a boil. Reduce the heat to low and simmer for 30 - 40 minutes or to the desired consistency, stirring occasionally. Serve over hot cooked rice.
