Step by Step Method

Step 1

Preheat oven to 350 degrees F, then set oven rack to second-lowest position.

Step 2

Grease a 9-inch square baking pan (or can use an 11 x 7-inch baking pan, adjust baking time slightly).

Step 3

In a large bowl combine the first six ingredients; beat on low speed for 30 seconds, then beat on medium for 2 minutes.

Step 4

Pour half of the pumpkin mixture into baking pan.

Step 5

For topping; in a bowl, combine all the topping ingredients together until well blended, then sprinkle half over the batter.

Step 6

Carefully spread with remaining batter.

Step 7

Sprinkle with remaining topping (pan will be full).

Step 8

Bake for 35-40 minutes or until a toothpick inserted near the center comes out clean, then cool on a wire rack.
