"Came up with this recipe when I found myself faced with a 1/2 can of pumpkin puree. For an unusual (but oh so good) combination, try adding chocolate chips to the batter."

Step by Step Method

Step 1

Preheat oven to 400 degrees F. Oil or line muffin tin with paper liners.

Step 2

Mix together the pumpkin, eggs, oil and sugar. Add the flour, baking powder, baking soda, spices and salt and blend. Stir in craisins or chocolate chips.

Step 3

Fill cups 2/3 full and bake at 400 degrees F for 15 - 18 minutes. Remove from oven and remove muffins from tin and allow to cool on rack before serving.
