Pumpkin Muffins

Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmegn
- 1/2 teaspoon salt
- 1 cup craisins or chocolate chips
How to Make

Step 1: Preheat oven to 400 degrees F. Oil or line muffin tin with paper liners.

Step 2: Mix together the pumpkin, eggs, oil and sugar. Add the flour, baking powder, baking soda, spices and salt and blend. Stir in craisins or chocolate chips.

Step 3: Fill cups 2/3 full and bake at 400 degrees F for 15 - 18 minutes. Remove from oven and remove muffins from tin and allow to cool on rack before serving.
