Step by Step Method
Step 1
Lightly spray a 15x10 inch pan with cooking spray. Preaheat oven to 350 degrees.
Step 2
Stir together thoroughly all dry ingredients (first 7 ingredients). Set aside. In another large mixing bowl, beat together eggs, oil, and pumpkin, sugar and vanilla. Make a well in the middle of the dry ingredients and add the liquid ingredients; beat only until well combined with mixer (about 2 minutes, no more). If adding the nuts, stir these in now. Spread into pan.
Step 3
Bake at 350 degrees for 22-25 minutes (check several minutes before the earliest baking time since all oven temps vary). Cool on wire rack.
Step 4
Frost with cream cheese frostingf.
