Ingredients

The ingredients are:
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 4 eggs
  • 1 cup oil
  • 1 (15 ounce) can pumpkin (not pumpkin pie filling)
  • 1 2/3 cup sugar
  • 1 tablespoon vanilla
  • 1 cup chopped toasted poecans or walnuts (optional)

How to Make

  • Step 1: Lightly spray a 15x10 inch pan with cooking spray. Preaheat oven to 350 degrees.

  • Step 2: Stir together thoroughly all dry ingredients (first 7 ingredients). Set aside. In another large mixing bowl, beat together eggs, oil, and pumpkin, sugar and vanilla. Make a well in the middle of the dry ingredients and add the liquid ingredients; beat only until well combined with mixer (about 2 minutes, no more). If adding the nuts, stir these in now. Spread into pan.

  • Step 3: Bake at 350 degrees for 22-25 minutes (check several minutes before the earliest baking time since all oven temps vary). Cool on wire rack.

  • Step 4: Frost with cream cheese frostingf.
