"After investing in several of Taste of Home Comfort Food Diet cookbooks, my husband and I have been eating healthier and enjoying some tasty dishes. This is one of our new favorites - many of our new favorite dishes have had Mexican influences, and this one is different with the mole sauce. One serving is 2 tacos."

Step by Step Method

Step 1

In a large skillet, stir-fry the pork strips and chopped onion in the vegetable oil for about 3-4 minutes, or until the pork is now longer pink. Drain and move the pork and onions out of the skillet and keep warm.

Step 2

In the same skillet, stir together the enchilada sauce, peanuts, chocolate chips, raisins, garlic, cumin, and crushed red pepper flakes over medium heat for about 2-3 minutes, until the chocolate is completed melted. Pour these ingredients into a blender and process until smooth.

Step 3

Return the sauce to the skillet. Add in the corn, cooked pork and onions. Stir together and cook until warmed through. Spoon the taco filling into the tortillas and serve with lettuce, sour cream, and green onions.

  • Purchase pork tenderloin that is fresh, not frozen.
  • Look for tortillas that are made with whole grains for a healthier option.

  • Instead of pork tenderloin, use chicken breast. The benefit of this substitution is that chicken is a leaner protein, so it will provide the same flavor with fewer calories and saturated fat.
  • Instead of canola oil, use olive oil. The benefit of this substitution is that olive oil is a healthier fat and will add more flavor to the dish.
