Step by Step Method
Step 1
In a pot over medium heat heat the oil and then add the next 5 ingredients (onion - pepper) and cook, stirring for 3-5 minutes or until onion is translucent.
Step 2
Stir in 2 quarts of water and then whisk in the cornmeal and bring to a simmer. Reduce heat to low and cook uncovered for 15 minutes, stirring occasionally.
Step 3
Stir in kale and beans and cook stirring for 5 minutes.
Step 4
Stir in Parmesan and season with salt and pepper.
