Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1 onions, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon rosemary, fresh, minced
  • 2 teaspoons kosher salt
  • 1 teaspoon pepper
  • 3/4 cup cornmeal
  • 4 ounces kale (stemmed and the leaves torn into 1 inch size pieces, this is 1 bunch of kale)
  • 1 can (15.5 ounces) cannellini beans (rinsed and drained)
  • 4 ounces grated Parmesan cheese (this is about 2 cups grated cheese)

How to Make

  • Step 1: In a pot over medium heat heat the oil and then add the next 5 ingredients (onion - pepper) and cook, stirring for 3-5 minutes or until onion is translucent.

  • Step 2: Stir in 2 quarts of water and then whisk in the cornmeal and bring to a simmer. Reduce heat to low and cook uncovered for 15 minutes, stirring occasionally.

  • Step 3: Stir in kale and beans and cook stirring for 5 minutes.

  • Step 4: Stir in Parmesan and season with salt and pepper.
