Step by Step Method

Step 1

In a skillet on low heat heat the oil and then add in the vegetables (onions - plantain) and cook stirring occasionally for 20-30 minutes or until ingredients brown and soften. Stir in the cilantro, mint, tomato sauce, pineapple juice, brown sugar and achiote paste and bring to a simmer and cook for another 10 minutes; remove from heat.

Step 2

Place mixture in food processor or blender and puree until smooth.

Step 3

Place a sieve from a bowl and strain sauce, reserving liquids and discarding solids.
