Ingredients

The ingredients are:
  • 1 tablespoon peanut oil
  • 1 1/4 cups onions, diced
  • 1/4 cup garlic, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 habanero chile, chopped
  • 1 plantain, very ripe, peeled, chopped
  • 2 1/2 tablespoons cilantro, chopped
  • 3 sprigs mint, chopped
  • 1 cup tomato sauce
  • 46 ounces can pineapple juice, unsweetened (1 can)
  • 2 tablespoons brown sugar, dark
  • 3 ounces achiote paste (packaged found in Latin food stores or this is a substitute for the achiote paste https://www.recipezazz.com/recipe/achiote-paste-substitute-44651)

How to Make

  • Step 1: In a skillet on low heat heat the oil and then add in the vegetables (onions - plantain) and cook stirring occasionally for 20-30 minutes or until ingredients brown and soften. Stir in the cilantro, mint, tomato sauce, pineapple juice, brown sugar and achiote paste and bring to a simmer and cook for another 10 minutes; remove from heat.

  • Step 2: Place mixture in food processor or blender and puree until smooth.

  • Step 3: Place a sieve from a bowl and strain sauce, reserving liquids and discarding solids.
