"Fresh hearts of palm (Palmito) are always in abundance in all the markets here in Costa Rica. They are eaten in many ways, but I've never considered a sauce! This goes well with any type of seafood. Recipe is from the Lighthouse restaurant in the Grand Caymans."

Step by Step Method

Step 1

Sauté the hearts of palm in the butter and olive oil, until they are fall-apart tender, but do not burn.

Step 2

Add the garlic, half & half, salt, pepper, and cumin, and then heat until the mixture just begins to simmer.

Step 3

Remove from heat, and blend in a mixer, or food processor until smooth.
