"Craig Claiborne. The stronger the honey you are using the more pronounced the flavor on this recipe.its a very thick batter , i used 1/2 cup honey and 1/2 cup applesauce and came out fine ."

Step by Step Method

Step 1

Preheat oven to 325°.

Step 2

Cream shortening; add honey,orange rind and egg.

Step 3

Sift dry ingredients and add to creamed mixture.

Step 4

Add orange juice and nuts.

Step 5

Put in 9x5 bread pan that has been greased and floured.

Step 6

Bake 70 minutes.

I made this for my husband who likes nuts in everything. He ate my orange, so I couldn't use any orange zest, but I had a minneola (one of those orange/lemon hybrid thingies). I used the zest from that. I had no applesauce, so I was unable to take the suggestion of using part applesauce. I think I may try that next time to see what happens. It was not as heavy as what I thought it would be. My husband liked it. He said he could taste the lemon from the minneola, though. Maybe next time he'll leave my orange alone. I made this for 2019 Alphabet Soup. We both liked this and I will make it again.
