"Some call them hoe cakes, we call them cornbread patties in my family. My mom and grandma have made these for as far back as I can remember. Mom finally wrote down the measured ingredients so that I could make these tasty morsels at home for my family. This is very quick and easy to make for those busy weekday meals. You can't get any more Southern than this!"

Step by Step Method

Step 1

Mix all ingredients in a bowl just until mixture forms a thick batter, do not over mix. Add enough oil to frying pan to just cover bottom of pan and heat on medium high until hot.

Step 2

Drop one tablespoon of batter into hot oil to form a small patty. Fry on one side until golden brown. Turn and fry on the other side. Remove to paper towel lined plate.

Step 3

Continue browning in batches, adding more oil as necessary. This will make about 20 patties.

Step 4

Serve immediately with butter. You can also serve with honey or your favorite sweet preserves.

Step 5

Any leftovers can be frozen and easily reheated in the toaster oven.

I had company from Georgia and wanted to show them my Southern hospitality by making a Southern themed meal for us while they were here. I first had these when I lived down in NC a few years back. I decided to make them and was glad to find this recipe here. I made them to go with some Kidney Beans I had for lunch, and they were great to have with the beans. The patties are so delicious and just sweet enough to offset the onion I put on my beans. They will be made again for sure! Thanks for sharing with us Nancy! Linda
