"Australian's love pikelets. They are a little like pancakes, only served smaller and the batter is a little thicker. Parents often pack them in the kid's school lunch or often serve them as a snack for young an old alike. Pikelets may be eaten hot or cold. They are delicious spread with jam and cream or whatever you prefer. My DD loves hers with lemon juice and a sprinkling of sugar on top."

Step by Step Method

Step 1

Combine the milk and vinegar together and set aside.

Step 2

Sift the flour, salt, bicarbonate of soda into a mixing bowl and stir in the sugar.

Step 3

Add the egg, combined milk and vinegar, melted margarine, and vanilla essence and whisk or use and electric beater & beat until the batter is smooth, and a thick pouring consistency.

Step 4

Lightly grease a pan and place a dessertspoon of mixture into pan and cook until bubbles appear, turn the pikelet with a spatula and cook both side's until golden.

Step 5

Remove from pan and place on a cloth or between layers of paper towel to cool.

Step 6

Pikelets may be eaten hot or cold. Delicious spread with jam, cream or whatever you like.
