Step 1: Combine the milk and vinegar together and set aside.
Step 2: Sift the flour, salt, bicarbonate of soda into a mixing bowl and stir in the sugar.
Step 3: Add the egg, combined milk and vinegar, melted margarine, and vanilla essence and whisk or use and electric beater & beat until the batter is smooth, and a thick pouring consistency.
Step 4: Lightly grease a pan and place a dessertspoon of mixture into pan and cook until bubbles appear, turn the pikelet with a spatula and cook both side's until golden.
Step 5: Remove from pan and place on a cloth or between layers of paper towel to cool.
Step 6: Pikelets may be eaten hot or cold. Delicious spread with jam, cream or whatever you like.
