Step 1

Peel and chop eggs, set aside.

Step 2

Melt butter over medium heat, whisk in flour and cook til golden. Add milk, a little at a time, whisking continually until mixture thickens.

Step 3

Turn off heat and add salt, pepper and sliced eggs. Serve over toast.

Your recipe "made my day" yesterday when DH & I hosted a family brunch. I wanted something tasty that worked well w/potato hash, was a departure from scrambled eggs & could be served easily to a crowd. Your "Mom's Creamed Eggs" ticked all the right boxes. I made 2 changes (as we agreed) by adding crisped bacon to the egg mixture & served it over a small-dice onion-potato hash w/toast & fruit on-the-side. It was rich, satisfying & well-received by my guests. Thx for posting this recipe.
