"This is one of my favorite side dishes that I often serve as part of a Mexican meal. It's even good by itself if you're in the mood for a vegan meal. The amount of vegetable broth listed is how much my rice cooker requires; many rice cookers are different, so just use as much liquid as you would normally use for 2 cups of brown rice."

Mediterranean Brown Rice and Spicy Black Beans Replace the Adobo seasoning with 1 teaspoon of Italian seasoning. Add 1/2 cup of kalamata olives, 1/2 cup of feta cheese, and 1/2 cup of sun-dried tomatoes to the cooked rice and beans. Stir in 1/4 cup of fresh parsley instead of cilantro before serving.

Mediterranean Rice and Lentils Replace the Adobo seasoning with 1 teaspoon of oregano. Substitute 1 cup of cooked lentils for the black beans. Add 1/2 cup of kalamata olives, 1/2 cup of feta cheese, and 1/2 cup of sun-dried tomatoes to the cooked rice and lentils. Stir in 1/4 cup of fresh basil instead of cilantro before serving.

Guacamole: This creamy, flavorful dip is the perfect accompaniment to the Mexican Brown Rice and Spicy Black Beans. The creaminess of the guacamole will balance the spiciness of the beans, and the lime in both dishes will bring out the flavor of each.
