"Frozen meatballs and an easy tomato rice, baked together in the oven for a quick prep weeknight meal. Knorr's Tomato Bouillon with Chicken Flavor Granules is at most grocery stores (including Walmart) and available online. A green salad goes nicely with this dish. Add some crushed red pepper flakes if you want it a little spicy."

Step by Step Method

Step 1

Preheat oven to 350°F.

Step 2

In a deep baking dish, add all of the ingredients except the frozen meatballs; stir well.

Step 3

Place the frozen meatballs over the rice mixture evenly (I do three rows of four meatballs).

Step 4

Tightly cover the baking dish with foil and bake until rice is tender and the meatballs are cooked through (about one hour).

Step 5

When serving, sprinkle with additional grated Parmesan cheese, if desired.
