"I am a big olive fan so, when I saw this recipe in an Everyday Food Magazine I had to try it. The recipe calls for either thyme or rosemary but I much prefer the rosemary in this recipe."

Step by Step Method

Step 1

In a medium sauce pan, combine the olives, olive oil, orange slices, lemon slices and rosemary and season to taste with red pepper flakes.

Step 2

Bring to a simmer and cook, stirring occasionally, 5 minutes.

Step 3

With a slotted spoon, transfer to a serving dish; reserve oil for another use.

Step 4

To store, let cool and store in an airtight container for up to a week.
