Step by Step Method

Step 1

In large saucepan with boiling salted water, cook pasta al dente.

Step 2

Meanwhile,heat oil in large skillet on medium heat. Add garlic and chili pepper and cook for 2 minutes;

Step 3

Add chicken, saute 5 minutes or until lightly golden.

Step 4

Season with seasoned salt (I use Lawry's) and pepper.

Step 5

Add zucchini to same skillet and cook for 5 minutes until squash is crisp-tender.

Step 6

Drain pasta,and toss with some olive oil; place on a oven proof platter,top with chicken,zucchini and sprinkle with the cheese.

Step 7

Place under the broiler for a couple of minutes until the cheese is melted and golden.

Step 8

Sprinkle some fresh basil (VERY IMPORTANT) and...eat.

We loved the flavor of this linguine dish...It made a lot and I downsized the amount of zucchini...I only used 1...both the hubby and I thought it was on the dry side...there's no sauce to keep it wet...I did use a bit of butter during the tossing of the noodles...which I tossed in a cast iron pan...it worked great under the broiler...I used shredded Parmesan for my cheese...the broiled cheese was delicious...and like others have mentioned...you do not want to forget the fresh basil...thanks for sharing your recipe...made for "Billboard" tag game...

Very good -- we used cheddar cheese and forgot the chili peppers. Used garlic salt for the seasoning salt. Easy and good!

We thoroughly enjoyed this light pasta! Used kamut noodles, a grating of sharp cheddar, one Thai chili and a splash of lemon juice. Perfect! Did have the chiffonade of basil but forgot to put on before I took the photo. The basil is a must in this recipe! Thanks for another keeper Pia! Made for Billboard Recipe Tag.
