"Here's a great way to make your own ice cream sandwiches!!! If you can't find the Nabisco Chocolate Wafer Cookies in your store (check near the ice cream toppings, as it seems they are sometimes in an odd place in the store), you can use my recipe for Chocolate Wafer Cookies (Like Nabisco Chocolate Wafer Cookies), to make these yummy treats! The kids and "Big Kids" will be smiling ear to ear while having one of these! Try rolling the finished sandwiches in mini chocolate chips, sprinkles, crushed nuts, M&M's, or your favorite candy bar, then freezing. You can also use these in making an Ice Cream Sandwich Cake for a special treat or Birthday! NOTE: Preparation time does NOT include time to soften the ice cream. Add on at least 1/2 hr. for that to your preparation time. Cooking time is chilling time. Make sure once you make these you let them sit in the freezer for AT LEAST 2 hours before serving, so the ice cream has a chance to harden. "

Step by Step Method

Step 1

Soften the ice cream until it is easily spreadable.

Step 2

Top one half of cookie with some ice cream (at least 1" thick), then put another cookie on top. (Press down easy, so you don't crack the cookies).

Step 3

If you are decorating the sides with your favorite nuts, candies or candy bars, do so now by rolling the sandwich, in the treat of your choice, all the way around.

Step 4

Wrap each ice cream sandwich in saran wrap, and freeze for at least 2 hours before serving. Print Recipe

I made up some of Linda's Chocolate Wafer Cookies (Like Nabisco Chocolate Wafer Cookies) to freeze and have on hand last month, so I took them out of the freezer to make these ice cream sandwiches to bring to my granddaughter's birthday party. I used vanilla and chocolate chip ice cream to fill them with, then used sprinkles, chopped nuts, and mini chocolate chips to decorate the edges. They looked almost too pretty to eat! ALMOST! Once the kids saw them, they were gone!

Made these for us during this hot weather and we loved them! Homemade ice cream is the best. Used chopped nuts around the edges. Yum!

I was in the grocery store and came upon the chocolate cookies on a display near the ice cream so I picked them up thinking ice cream sandwiches from seeing this recipe previously. Brought them home and made about 20 to stick in the fridge. I used sprinkles and nuts to roll them in and used vanilla ice cream in some and strawberry ice cream for some. My kids love them and ask for them all the time. It is such a great little snack that the kids can take outside to eat and enjoy during this hot weather!

I did find the cookies and they were so easy to make into ice cream sandwiches. You can use any flavor ice cream you like when you make these. I haven't found one flavor yet that I didn't like!

We had these for dessert after a music concert for all my students. We threw a Halloween party and these were on the goodie table. They went over very well with everyone. I decorated the outsides with Halloween sprinkles. They were enjoyed by all and I will be making these during the summer or when I feel like a little snack from the freezer. You can make them up ahead and have them on hand anytime the mood strikes!

What an easy treat to please the young crowd as well as the young at heart! Perfect on a hot summer day. Everyone loved these ice cream sandwiches. I made them using the crushed candy bar. Have the ingredients on my shopping list for the long weekend, this time will make some with crushed nuts for those partial to Nestle's Drumsticks. Thank you Linda this is a keeper!
