"Found @ allrecipesdotcom & credited to Dickinson's (Dickinson's Fruit Products) - I saw recently that 1 of my on-line cooking friends had a recipe for homemade lemon curd. I've always liked it, but seldom seen it here in Iceland except in high priced import stores. So I tagged her recipe to make for a tag game & then wondered what I'd do w/it when the time came. I recipe searched & found 2 I esp liked that used lemon curd. This is my favorite & will be great for entertaining family & friends, mainly because I favor light desserts to follow otherwise heavy dinner meals. As I often do, I modified the recipe slightly (mainly in response to reviews) & this is the result. I'll be using the homemade lemon curd to make this recipe in the next 2 wks. ENJOY!"

Step by Step Method

Step 1

Beat heavy cream in a med bowl until stiff peaks form.

Step 2

Stir together curd, cream cheese & vanilla (or lemon) extract in sml bowl until smooth.

Step 3

Stir curd mixture into whipped cream until blended.

Step 4

Divide mousse into serving dishes.

Step 5

SERVING SUGGESTIONS: Tall stemmed glasses work well for a nice presentation. If using them, divide the mousse plus berries (if using) & garnish w/mint as desired. Refrigerate until ready to serve (I'll serve a shortbread cookie w/mine).
