Step 1: Beat heavy cream in a med bowl until stiff peaks form.
Step 2: Stir together curd, cream cheese & vanilla (or lemon) extract in sml bowl until smooth.
Step 3: Stir curd mixture into whipped cream until blended.
Step 4: Divide mousse into serving dishes.
Step 5: SERVING SUGGESTIONS: Tall stemmed glasses work well for a nice presentation. If using them, divide the mousse plus berries (if using) & garnish w/mint as desired. Refrigerate until ready to serve (I'll serve a shortbread cookie w/mine).
