Ingredients

The ingredients are:
  • 1 cup heavy cream
  • 1 jar (10 ounce) lemon curd (Dickinson's Lemon Curd suggested)
  • 1 package (8 ounce) cream cheese (softened)
  • 1/4 teaspoon vanilla extract (may use lemon extract for stronger lemon flavor)
  • Fresh mixed berries, optional garnish
  • Fresh mint, optional garnish

How to Make

  • Step 1: Beat heavy cream in a med bowl until stiff peaks form.

  • Step 2: Stir together curd, cream cheese & vanilla (or lemon) extract in sml bowl until smooth.

  • Step 3: Stir curd mixture into whipped cream until blended.

  • Step 4: Divide mousse into serving dishes.

  • Step 5: SERVING SUGGESTIONS: Tall stemmed glasses work well for a nice presentation. If using them, divide the mousse plus berries (if using) & garnish w/mint as desired. Refrigerate until ready to serve (I'll serve a shortbread cookie w/mine).
